Comfort food

Husband and I are really ready for cooler weather. Part of that reason is comfort food. I mean, think of the food we eat in the cooler months. Soups, chili, casseroles. Well, this weekend we just couldn't wait for cooler weather anymore.

I've been sitting on a Taste of Home Halloween cookbook/magazine for a couple of years. I've only tried a couple of recipes out of there. So this past weekend, I had some ham and cheese and a ton of potatoes sitting around and decided to make this ham and potato casserole from the book.


What you need:
2 pounds frozen Southern-style hash brown potatoes, thawed. (i just shredded a couple of potatoes and kind of cooked them up a little instead of buying the frozen kind)
2 cups cubed cooked ham
2 cups (16 oz) sour cream
1 1/2 cups shredded cheese
1 can (10 3/4 oz) cream of chicken soup, undiluted
1/2 cup butter, melted
1/3 cup chopped green onions
1/2 tsp pepper
Topping:
2 cups crushed cornflakes
1/4 c melted butter

- In a bowl, combine the first eight ingredients. Transfer to a greased 13-in x 9-in x 2-in baking dish. Combine topping ingredients; sprinkle over top. Bake, uncovered at 350ยบ for 1 hour or until heated through. 

Husband and the kids loved this. Morgan actually said "I wish I could eat this every day!" She even took leftovers for lunch! I was a little overwhelmed by the flavor. 4 monkeys. 

I also made these. I wanted to try the recipe to see if I would want to make them for Jackson's birthday. No. No no no. These didn't work out well for us. 

Husband made chili on Sunday and it is so yummy!
