An oldie, but a goodie

Technically, what I made for dinner tonight isn't a "new" recipe. But I've only tried it once, so I'm going to call it new. And really, the recipe itself stayed the same, I just displayed it different.

I made mini meatloaves! Now I know meatloaf is one of those controversial meals. But before you go judging me, I don't have a minivan, okay? That said, these little things are bad ass. I got the idea from bettycrocker.com. This is not one of my favorite recipe sites. Things take forever to load, I can never get into my recipe box and I can't organize my recipes into categories as I go. And because things never load, I can't ever organize my recipes. Or read them. Very annoying! It sucks too, because when I am able to get on there, there's some great recipes. Oh well.

Where was I? Oh, I got the idea from bettycrocker.com. But I use the meatloaf recipe from my Better Homes and Gardens cookbook. Which is falling apart and some of the pages are stuck together cause it got wet. Any donations are welcome to help me buy a new one (or you can donate the cookbook itself).

I linked to the recipe, but I wanted to let you know about my variations. I use Italian breadcrumbs instead of plain. Since I use the Italian breadcrumbs, I don't add the parsley, sage, basil or oregano. I also add chopped red, yellow, green peppers and onions (I buy this frozen at the store) to the meat mixture.

Instead of making this into a loaf, I pat the meat mixture into muffin cups. Bake at 350 for 30-35 minutes or until meat is no longer pink. You can add the ketchup mix on top, or melt cheese (mozzarella is ohsoyum!) on top. Tonight, I did both - I added ketchup to some and cheese to the others. (Makes 12)

I also made mashed potatoes and lima beans (which I burned - don't ask - and they smelled like pot) and broccoli and cauliflower.

 Morgan totally loved this meal. She thought it was the coolest thing ever to make it in the muffin tins (quite a different tune than the last time I made it). Jackson only ate the potatoes. The fun part was, we were all in the kitchen helping prepare dinner. Morgan and her dad were peeling potatoes and Jackson was "helping" chop the peppers and onions. Good times. I give the mini meatloaves 4 monkeys.
